That’s why in today’s blog, we’d like to share a few very quick, very easy kabob recipes that are sure to make your next meal just a bit easier. Coming home at the end of a long day and slaving in front of the oven just isn’t something anybody wants to do. The weather has been so nice in our neck of the woods that both of these recipes involve a grill, so grab a few ingredients and let’s get started!

Slightly Sweet Chicken Kabobs

There’s almost nothing easier to make than a few kabobs. You don’t have to worry about heating up your house or keeping anything particularly fancy on hand. As a matter of fact, you probably have most of these ingredients in your pantry right now. Here’s what you’ll need:

Start by heating your grill to medium-high. Next, cut your chicken breasts, pineapple, and olive oil into one inch chunks. Beat one egg, then add your chicken breasts to a plastic bag with the beaten egg. Coat the chicken. Next add about half a cup of cornstarch and salt and pepper, then shake to coat. Oil the grates of your grill with a touch of olive oil to keep everything from sticking and skewer everything up. Cook until the chicken shows no pink and serve immediately. Delicious and easy–and good for you!

Meatloaf Kabobs

This recipe is simple to make but packs a massive flavor that’s hard to beat. Here’s what you’ll need:

You’ll start by combining 1 lb. of ground beef with an equal amount of ground pork. Using a cheese grater, shave off ¾ cup of carrots and 1 cup of potatoes. Combine potato shavings, carrot shavings, beef, pork, sage, salt and pepper, and one egg. Mix well until everything comes together. Don’t be afraid to use your hands to really get everything combined perfectly.

Refrigerate this mixture for about an hour. In the meantime, you can pre-heat your grill to medium-high heat and cut the remaining potatoes and carrots into bite sized pieces, then toss them into a pot of boiling water until they are softened. Next, form your meat mixture into the shape of a ball. Skewer one ball, one piece of potato, and then one carrot.

Do your best to get these all skewered up well, adjusting as needed to keep everything together perfectly. Throw your meatloaf kabobs onto the grill and cook until you have an internal temperature of at least 165 degrees. You can also mix things up a bit and top with ketchup or wrap your kabobs in bacon. Either way, we think that this is one dish you’re sure to love!
